Who's looking forward to the weekend?

I am the best daughter and grand daughter ever! Normally when I bake a cake I make 3 or 4: one for me, mum & dad and my grandpa's. Both of my Nanny's passed away when I was young so I'm pretty sure they appreciate my cakes.

This week I made Banana and Sour Cream Cakes. I only made 3 (mum & dad and grandpa's) though as I hate bananas... Yucky! I opted not to taking a few mixing process pic, it literally looked like vomit in a bowl. So on to the recipe (I doubled this recipe for 1 medium sized and 2 small cakes).

Ingredients:
  • 125g butter
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 1 cup caster sugar
  • 3 mashed bananas
  • 1/3 cup sour cream
  • 2 cups self-raising flour
  • 1/4 teaspoon bicarbonate of soda
  1. Lightly grease and line a 20cm round cake tin. Preheat the oven to a moderate heat.
  2. Cream the butter, essence and sugar in a bowl until light and fluffy with an electric mixer.
  3. Add in the eggs one at a time, combining well.
  4. Stir in the banana, sour cream and dry ingredients.
  5. Spread the mix into prepared tin.
  6. Bake for 1 1/4 hours.
  7. Stand for 5mins, then turn out onto rack to cool.
 


This is my fur baby and baking buddy (and a few other things)! She is the name sake for the blog, Gypsy. She is a gorgeous, cuddly and fun loving 3 year old Border Collie. She loves cake, in all forms, just like her mummy.
