TGIF!

You may have noticed that I missed Friday Food last week, I had a baking blunder last week and had to start again. Hey, better late than never. I had failed at getting my proportions right for the ganache on the top, I ended up with a VERY thick chocolate sauce.

 
Peanut and Chocolate Slice
                                        138g Butter                                         
1 1/3 Cup Powdered Sugar
                                1 1/4 Cups Sugar                                 
1/4 Cup Peanut Butter
3/4 Cup Cocoa Powder
2 Tsp. Water
1 Tsp. Vanilla Extract
1/2 Tsp. Salt
2 Large Eggs
1/3 Cup Plain Flour
1 Cup Peanuts
3 Tbsp. Extra
 
 
Preheat the oven to 160 degress C. Line a 26x26cm baking pan with greaseproof paper and spray lightly with oil. Melt the butter in a saucepan until it is no longer foamy and has started to brown.
 
 
 
While the butter is browning combine the sugar, cocoa, water, 1 Tsp. vanilla and salt in a bowl with a mixer. Add the butter and combine. Add the eggs one at a time and combine well. Add the flour and combine. Lightly stir through the peanuts.
 
 
Transfer the mix to the pan and smooth. Bake for 25 minutes and remove to cool. Place in the freezer for 20 minutes.
 
 
In a bowl add the powdered sugar, peanut butter and 3 Tbsp. milk. Whip together until creamy. Spread over the brownie base and freeze for a further 20 minutes.

Here is a sneak peak at the secret family ganache recipe. Once the ganache is ready spread it over the top of the base and freeze for an hour. Remove from the pan and slice. Enjoy!
