Is everyone ready for the weekend?
 
This weeks recipe is Baked Pasta with Chicken and Sundried Tomatoes. I followed the recipe below but I would maybe use 3 chicken breast, it's all pasta otherwise. It must be good though as there were no complaints from the household rubbish bins. For those of you who would like to give it a try please read on!
 
 
6 Tbsp. butter
Course salt and pepper
500g pasta (I used penne and spiral)
1 tsp. Olive Oil
2 Chicken Breasts, Halved
1/2 cup Plain Flour, 2 Tbsp. extra
4 Garlic Cloves, Minced
6 Cups Milk
500g Mushrooms, Thinly Sliced
1/2 cup Sundried Tomatoes, Thinly Sliced
1 1/2 cups Grated Cheese
1 cup Parmesan Cheese
 
1) Preheat a fan forced oven to 200 degrees C. Cook pasta as per packet instructions.
2) In a frying pan heath the oil over medium-high. Season the chicken with salt and pepper. Cook until opaque throughout. Halve lengthwise and then slice thinly crossways.
3) In a heavy based pot melt the butter over medium heat. Add the flour and garlic. Cook, whisking for 1 minute. While whisking gradually add the milk. Bring to a simmer. Add the mushroom and tomatoes cooking a minute longer. Remove from the heat and gradually add the grated cheese and 1/2 cup parmesan cheese.
4) Spread the pasta over the base of an ovenproof baking dish. Cover with sliced chicken and then the sauce. Sprinkle remaining parmesan cheese over the top.
 
 
5) Bake uncovered for 5-10mins or until the top is golden and bubbling. Serve
