This weeks beautiful bake is called a Jewel Cake. I mentioned it to mumma bear last week and she chundered a little bit....well that's what she said anyway. When she was a little girl her aunty used to make this aaaaalllll the time, she made it so much that mum now hates. With that in mind I just had to make it so I could watch her reaction as she ate it. I'm evil, I know!
For this batch I used 3 different flavours of jelly: Raspberry, Lime and Lemon, but you could easily use one packet of jelly. Make the jelly as per the packet instructions and set aside until later.
For the cake base you will need:
- 1/4 cup sugar, + 3/4 cup sugar extra
- 1 cup almond flour
- 1/3 cup plain flour
- 3 large eggs
- 1 egg yolk
- 3 egg whites
- 1/4 cup extra fine sugar
- 2 Tbsp. melt butter
- 1/2 tsp. red food colouring
Preheat the over to 230 degrees C. On a clean work surface sprinkle over the 1/4 cup of sugar. Grease a slice pan with paper. Beat the almond flour, 3/4 cup of sugar, flour and eggs until combined. Add egg yolk and food colouring, mix again to combine. In a separate bowl whip the egg whites until foamy. Gradually add extra fine sugar until soft peaks form. Gently fold into the almond flour mix. Add the melted butter and gently fold in. Pour mix into the prepared pan and bake for 8-10mins. Remove from the tin and turn out onto the sugared surface. Trim the edges and cut a base to fit a spring form pan. Use the remaining to line the sides.
With the aid of this cake I now know that the fur baby does not like jelly!
For the filling you will need:
- 1 Tbsp. powdered gelatine
- 1 cup pineapple juice
- 1/4 cup water
- 1 1/2 cups whipping cream
- 1/2 tsp. vanilla extract
- 1 1/2 cups jelly cubes/pieces
Add the pineapple juice to a small saucepan over medium heat, Sprinkle over the gelatine and leave to dissolve. Remove from the heat and stir in the water. Leave to cool slightly then refrigerate until completely cold but still liquid. In a large bowl whip the cream and vanilla until soft peaks form. Whisk in the pineapple. Pour into the prepare pan. Drop in the jelly pieces and chill for at least 6 hours. Enjoy!
